Today I’m sharing one of my go-to recipes, classic Quiche Lorraine. I received this wonderful recipe from our daughters’ French teacher many years ago, and it’s been a family favorite ever since. I can’t think of a more delicious way to start the day than with this flavorful quiche. It’s amazingly rich and satisfying.
This is an especially wonderful recipe to keep on hand for company–or when you forget to thaw something for dinner, because you probably have all the ingredients (or similar versions of them) in your fridge and freezer!
Made with creamy Swiss cheese, eggs and cream, quiche Lorraine (named after the Lorraine region of France) is the best-known version of quiche.
Everyone seems to love this quiche, so I always try to have everything on hand to serve it for breakfast when we have overnight guests.
It’s also perfect for Easter brunch, baby showers, Mother’s Day, weekend mornings, and simple weeknight suppers. The possibilities are endless!
If you’ve always wondered how to make quiche, I think you’ll be pleasantly surprised at how easy and quick it is to put together.
The hardest part is waiting for it to bake, which takes about 45 minutes, plus cooling time.
Just remember to start making your quiche about an hour before you want to serve it, then pop it in the oven and enjoy the wonderful aroma as it bakes.
Whenever possible, I recommend using high-quality organic ingredients in this recipe. It really does make a difference! But if you don’t have organic ingredients on hand, I know you’ll still love this wonderful quiche!
Note: to make gluten-free quiche, either use gluten-free pie shells, which are readily available at natural food stores, or try my flavorful Crustless Mini Quiche recipe instead.
Easy Classic French Quiche Lorraine Recipe
Makes one 9″ quiche — 6 servings
Ingredients:
8 strips of bacon, cooked crisp and crumbled (I use pre-cooked nitrate-free bacon, microwaved until crispy)
4 eggs, beaten (preferably free range)
3/4 cup organic cream (or half & half, or whole milk)
1/2 tsp. salt
1/4 tsp. pepper
7 to 8 oz. Swiss cheese, shredded (about 2 cups) (if you don’t have Swiss cheese on hand, any flavorful cheese that melts easily will do. I’ve used the Swiss/Gruyere shredded blend from Trader Joe’s in this recipe and it’s amazing!)
1 unbaked pie shell (I like the ones shown in the photo above, which I find in the freezer section at Natural Grocers)
Directions:
- Preheat oven to 350º F.
- Sprinkle crumbled bacon over bottom of pie shell and top with shredded cheese
- Combine eggs and cream in a mixing bowl and whisk until well blended. Mix in salt and pepper.
- Pour egg mixture over cheese.
- Bake until quiche is lightly browned, about 45 minutes. Let cool in pan for 10 minutes.
- Cut into 6 slices and serve.
If you have leftovers, cover your quiche with foil and keep it in the fridge for up to three days.
