If you’re looking for the perfect side dish, you are going love this delicious herb-encrusted oven roasted little potato recipe! These herb-encrusted mini potatoes are crispy on the outside, tender inside, and have just the right amount of fragrant herbs and seasonings to wake up your taste buds.
This delicious side dish turns out great every time I make it, which is a lot! It has become a staple at nearly all our family gatherings and holiday dinners. In fact, I often plan my entire menu around these wonderful roasted potatoes.
How many other side dishes go with everything, are easy to make, and are loved by the whole family? Not many.
You can put this simple side dish in the oven and let it bake while you prepare your main dish, making this the perfect recipe for busy weeknight dinners.
Plus, this little potato recipe uses simple ingredients and is surprisingly quick and easy to make.

Not only is this baby potatoes recipe the perfect side dish for both weeknight suppers and Sunday dinners, it’s a great addition to any type of brunch or breakfast you might be hosting.
I often serve these little potatoes with my quiche Lorraine recipe when we have weekend guests, and they’re always a big hit!
Feel free to change things up with the seasoning mix. You can use fresh herbs instead of dried, add a touch of black pepper–or even a sprinkle of Parmesan cheese at the end. These oven roasted baby potatoes always turn out great, no matter what you put on them.
Don’t be afraid to add the crushed red pepper, though. It adds a nice flavor without making the potatoes too spicy.
Crispy Garlic and Herb Oven Roasted Little Potato Recipe
Serves 4
Prep time: 15 minutes
Cooking time: 25 minutes
Ingredients:
2 Tbsp. olive oil, avocado oil, or refined coconut oil
2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
1/2 tsp. each of these dried herbs: basil, marjoram, dill weed, thyme, oregano, and parsley (or 3 tsp. dried Italian seasoning)
1/2 tsp. crushed red pepper flakes
1/2 tsp. sea salt
3 lbs. small potatoes, such as fingerling potatoes, new potatoes, baby red potatoes or creamer potatoes (you can also use 4 large russet potatoes)
Directions:
- Preheat oven to 475 degrees F. (245º C).
- Cut the little potatoes in halves or quarters, depending on the size of your potatoes. If using larger potatoes, cut in 1-inch cubes.
- In a large bowl, combine olive oil, garlic, herbs, red pepper, and salt. Add the cubed potatoes to the olive oil mixture and stir until evenly coated.
- Cover a large baking sheet or roasting pan with foil or high-heat parchment paper. Place the potatoes in an even layer on the baking sheet.
- Roast potatoes in the hot oven for 20 to 30 minutes, turning once or twice while baking, until potatoes are golden brown on all sides and fork tender.
- Carefully remove the pan from the oven and serve the potatoes immediately. Sour cream, a drizzle of melted butter, or ketchup all pair beautifully with these little potatoes.
Side note: If you prefer crispy smashed potatoes, after removing the potatoes from the oven, you can slightly smash them with a potato masher. Serve with a drizzle of melted butter or garlic butter.
How to make diced potatoes in an air fryer
These crispy potatoes can also be made in an air fryer. However, since they need to be cooked in a single layer to achieve the crispy texture, you will either have to cook them in a couple of batches or cut the recipe in half.
After coating the potatoes in the seasoned olive oil, pop them in the air fryer and cook at 400 degrees for 12 to 20 minutes, or until golden brown and fork tender. Make sure to vigorously shake the basket every 5 to 10 minutes to ensure the potatoes cook evenly.
Every air fryer varies, so you might need to adjust the time according to your particular fryer size and model. This is the one I have, and I love it.
